@Ken and I came up with a great idea to post menus to fictional restaurants that we created. At first we thought we were the only cool restaurant nerds who would commit to this. We were wrong. So we made this thread. Or more accurately, I made this thread very quickly while I was at my terrible job and did not have time to properly format it. I would like to cede control of my first post to @Ken so that he can give this thread the diligence that it deserves. Please use your all-knowing, omnipresent, and omnipotent Chorus powers to save this thread.

Damn, haven’t been able read everything but some of this stuff sounds unbelievable. Hopefully I’ll have nothing to do at work tomorrow and will write one up. A couple things I was going to have have been mentioned but that’s ok

 

I'm gonna do a dessert menu tonight to add to mine. Maybe a small cocktail list.

 

APPETIZERS

"Pheasant Wings"

• Wow. Rare fowl. Teriyaki and mustard glaze. Parmesan dust. Celery. Blue cheese dip. Fuck you.

"Dadbolt Roll"

• Sea bass. Lime pulp. Avocado. Partially sun dried Texas peach. Nikiri.

"Milkshake Roll"

• Salmon. Caramelized plantain. Cream cheese. Pecan chunk. Smoked pecan butter sauce.

"Mushroom Empanadas"

• Fried yucca shell. Wild mushroom cream.

"Quail Egg Quiche Bites"

• Creme fraische. Wild mushrooms. Spinach. Purple Potatoes.

“Veal and Pork Bratwurst”

• Curry ketchup.

“4 Dips and Chips”

• Salsa de pina. Guacamole. Roasted eggplant and fresh black olive. Habanero peanut butter. Plantain chips or pita.

“Sourdough Bread”

• Whipped butter.

“Texas Chili”

• No Beans. Chili peppers. Beef. Cactus. Corn Bread. Sour cream dollop.

SOUPS

"Curry Cauliflower Soup"

• Red curry. Puréed cauliflower and orange bell pepper. Cashew garnish. With de-seeded habanero corn bread waffle for dipping.

"Milkshake's Chicken Soup"

• Chicken. Coconut milk. Green tea. Carrot purée. Bok choy. Egg noodles. Basil leaf.

“Lobster Bisque”

• Sherry. Lemon. Skosh of Tabasco. Dollop of goat cheese.

SALADS

“Blue Cheese Wedge”

• Bacon.

“Caesar”

• Pulverized sardines.

“Spring Greens”

• Green Apples. Candied Pecans. Feta. Balsamic.

ENTREES

"Antelope Brisket Oscar"

• Over-night-smoked Antelope, chopped off the rib. King crab. Southern smoked béarnaise. Scalloped potatoes.

"Beef Fat Flash-Seared Lobster Tail"

• South African lobster tail flash sear-cooked with scalding Texas steak fat. Served atop a bed of charred grated coconut and fried egg white. Raw radish slices.

"Land. Sea. Air."

• Buffalo chateaubriand. Giant Prawn. Oak smoked Texas Quail. Sweet potato and roast plum mash. Parmesan crisps.

"Battered Beets Over Gnocchi"

• Beet halves and vegan cream cheese deep fried in a pistachio nut batter. Served atop butternut squash gnocchi.

"Vegan Al Pastor Tacos"

• Sun dried pineapple chunks and tofu sautéed in a red chili pepper purée with onion. Kimchi. Rice crisps. Corn tortilla. Plantain chips and Tex-Mex salsa.

“Chilean Sea Bass Filet”

• Seared. Brown butter. Teriyaki glaze. Fried rice.

"Chicken Fried Scallops"

• Seared in light bacon grease then deep fried. Honey + Tabasco mix for dipping. Mashed potatoes with chicken cream gravy and balsamic reduction drizzle. Braised red cabbage and collard greens. Pickled okra. Yeast roll.

"Goose Roast"

• Plum gravy. Chopped potatoes. Yellow onions. Carrots. Almond.

“Chili Relleno”

• Carnitas and chorizo mix. Chunky undercooked corn bread. Caramelized onions. Stuffed in an anaheim pepper. Oaxaca cheese. Queso fresco powder. Sour cream sauce. Guacamole side.

DESSERTS

“Grapefruit Cheesecake”

• Caramelized brown sugar.

“Banoffee Pie”

“Buttermilk Bread Pudding”

• Rum Sauce. Candied Fig.

“Twice Frenched Toast”

• Twice battered. Cream cheese spread. Pan fried banana, blueberry, vanilla reduction sauce.

 

Great looking menu!

I could literally order like 4 apps and be happy. But if I had to choose, I'd order the Empanadas and Milkshake roll and beg the kitchen for a side of that habanero peanut butter.

Then I'd get the Chili Relleno and Frenched Toast. Mmmm.

 

Let me start with the Bratwurst. Then I'd want the Antelope Brisket Oscar or the Chili Relleno. Your menu has some really interesting items and names. Well done!

 

Also, your french toast sounds amazing as well.

 

The French make the besssttt toast.

 

Now I can't wait to read the other menus!

 

Just wanna say this was an awesome idea! And I agree with whoever said that the Food thread has some super passionate people.

On another note, after looking at these again, I'm starving!

 

where is the @Justice Beaver menu?

And really I should be actually working. My director keeps coming in and I have to furiously close my word document.

 

Also, my menu makes no fucking sense.

I really thought we'd get more feedback on other menus that have been shared so far, it's kind of disappointing, but hopefully people will get more into it.

Shellfish Tower is a mad mans dish.

I'd lose myself in that. Clams and oysters are still alien to me. I'm scared in a good way at that and comforted by the familiars like the lobster. Sort of like a child at the ocean playing in and out of the perilous tide at shore.

Mushroom Gnocchi and Veal Lorenzo or Seafood Chowder is a jam.

Haricot vert are just French green beans. They're thinner and shorter. Essentially the same thing though.
