I recently discovered that one of the most globally ubiquitous dessert dishes is Rice Pudding. Basically nearly every culture around the world has their own unique version of making Rice Pudding. I kinda like what the Germans are doing where they mix in applesauce and/or fruit pie filling in their rice pudding along with tons of cinnamon.
I tried champorado (a Filipino rice porridge with chocolate) for the first time a few weeks ago and it was excellent. Although I’m itching to try an actual homemade one. The one I tried was like a store-bought one that you cook similar to a cup of noodles

A lot of cultures in East Asia they make their Rice Pudding warm and less sweet. It's more like a porridge or oatmeal but with rice. The wildest global rice pudding dish I found is called Tavukgöğsü, which is a Turkish dish that used to be served to the Ottoman Sultan. It's like a weird hybrid of rice pudding and chicken salad. It's literally just rice pudding with shredded chicken breast mixed into it.
