I had to stay at a hurricane shelter for a few days at a middle school during Irma and I had school cafeteria food for the first time since I was a kid. It was a trip. The chicken sandwiches, the pizza. The canned green beans, the strawberry carton milk, the apple juice pouch you gotta poke a hole into. It got me thinking I bet if someone made a food truck that served authentic school cafeteria food to nostalgic adults I bet that would be successful. Because It's a gimmick that relies on pretty cheap food the margins would be good too.
