    Firehouse is good, but I don't like the two separate pieces of bread structure of their subs. Subs need to be a single connected bun! Too messy.

    Captain Sorensen's Hot Sauce rules though.

    I'm gonna have to disagree with top and bottom bun being separate. Prefer it that way for the most part, especially as on a lot of sub rolls (if not wrapped) have the seam bursts and it just gets messy (which is funny you think the separate is messier). Jersey / Mikes firehouse are both done well with the top and bottom.

    I don't really like Firehouse though except for a few subs. Something about the steamed meat isn't right and then nearly every time they forget to add the extra shit at the local one near me. I always ask for a turkey bacon ranch with Jalapenos and the peppers are left off just about every time.

    Pasta is the best lazy mom meal. So easy. So good. Makes it look like I actually cooked instead of just twisting some knobs and pouring some sauce. Bless you, Italy.

    I am a tryhard with my pasta. Started doing it the "Italian grandma on a Sunday" way and haven't poored jarred processed sauce onto pasta since.

    • Cook your meat of choice (pork, lamb, italian sausage, ribs ect) in the pot with some olive oil
    • Remove from pot leaving a bit of grease
    • Cook grated garlic and diced onions (you can also add in some carrots and celery for aromatics) in the grease at medium
    • Add in a few tablespoons of tomato paste and mix in
    • Put about a cup of red wine in pot with mixture to deglaze
    • Let deglaze until at least half empty, while scraping bottom of pot to get grease Into your mixture
    • Add meat back in and stir
    • Add 16 OZ can of crushed tomatoes into pot
    • Fill the tomato can halfway with water and poor it into sauce
    • Add a few teaspoons of sugar, some black pepper, red pepper flakes, basil, oregano, pinch of salt
    • Stir in on medium high until boiling
    • Put on simmer for at least 3 hours, stirring every 30 minutes or so
    • Cook pasta to al dente in a separate pot
    • Reserve 1 cup of pasta water
    • Strain put back into pot
    • Gradually poor back in pasta water a few TBs at a time while tossing thoroughly
    • Add pasta to sauce, add cheese (parm, moz, ricotta, ect), stir, let simmer for 5-10 minutes

    Boom you got the pasta the way Italian-American nanas have been making it for generations. Takes time and mess but holy fuck it's worth it

    Oh jeez I’m just a jar sauce girl. For what it’s worth I like to get the nice jars of sauce and none of that Ragu or Prego nonsense.

    But that does look delicious and maybe one day I’ll get there :p

    A good cheap relatively quick pasta I like to do

    • 1lb of linguine all dente
    • Reserve Cup of pasta water
    • Set strained pasta aside
    • Melt a whole stick of butter in the pot on medium heat with grated garlic and black pepper
    • Once butter is melted and garlic is simmering add in lemon zest and stir
    • Add linguini back to pot, stirring back in your cup of pasta water gradually
    • Squeeze in juice from the lemon you grated
    • Add in pepper, salt, parm
    It is incredible. Maybe the best pasta dish in my arsenal. Pretty quick too.
