I just made a bowl of chili (which was awesome), and I don't go to this level of insanity, but I'll mix in some sour cream, cheese, and crushed tortilla chips and it totally changes the texture and flavor from what it tastes like right out the pot. Sometimes its like why go to all the effort, just to completely change the texture and taste, but eh, it's how I like it. This was actually the best batch of chili I've made in a while and since it's fresh in my mind, here's some of the things I did (most of what I think is far from controversial, but you never know around here). - I soaked some dried chili peppers in beef stock and then blended them up and poured that in. (Just ancho's this time, I like Guajillo but I ran out). - Reduced a bottle of Guinness with the onions and tomato paste before adding in the canned tomatoes and stock. - Used a lot of chilis and different types (blend of habaneros / jalapenos and serrano's so it's got good heat). - Cooked bacon in the pot first for extra fat. I used turkey this time and my wife likes it that way, but I wanted it to be not so lean, so I cooked the bacon, used the fat for frying everything else, and added the chopped bacon back in to simmer. - With the dried chili's and the beer, it was getting a little bitter so brown sugar to balance it out. - A healthy splash or Worcestershire sauce. - I like to use 2 big cans of tomatoes and I like a mix of crushed (regular), and then fire roasted diced. Gives a nice balance of textures.
I had to look at your location to see US as that's how chili is eaten in England and I remember a reddit post where a confused person from the UK was like wtf... you just dump it in a bowl and add shit on top? In England it's always called chili can carne, and it's normally kidney beans and beef and spices and served like a curry with white rice on one side of the plate. Just having a big bowl of chili would confuse people. I much prefer the American version (whatever that is, as I know chili is different to different people, but a big bowl is just comfort food this time of year).

lol you know like the vast majority of pancake syrup you get at a restaurant or buy from a grocery store is just corn syrup with artificial maple flavoring right? Anything in a plastic bottle is artificial maple. Only the $6 premium glass bottle syrups are the real deal.
