Nioh, The Surge, Ashen, Hollow Knight, Dead Cells, Salt and Sanctuary, Breath of the Wild( the focus on tougher combat and making you feel weak is definitely inspired by Dark Souls. Could probably argue that the focus on world building and lore vs a more traditional Zelda Story is very souls like.)
