There is a parktuber named Kevin Heimbach who is a former castmember with Crohn's Disease. Jokingly caims to be the leading expert in WDW bathrooms because he has spent more time in there than majority of people. He has covered this extensively. He says DAK has the best bathrooms on property.
i think i've generally avoided the bathrooms at the parks because their crowd levels are really large, but i do remember one of the bathrooms off of one of the Main Street gift shops being decent. outside of the parks (assuming you visit a resort for dining or something), there's a bathroom on the first floor of the Polynesian Resort that was really nice, and of course the ones at the Grand Floridian are pretty fancy
If you're in California Adventure you're playing yourself if you don't go to the Grand Californian to use the bathroom. Floor to ceiling stalls like your own private oasis.
I honest can't even remember using bathrooms in the parks when we were there in November lol. Only one that's coming to mind off the top of my head was I remember using one in Disney Hollywood Studios, and it was the one right between Mickey and Minnie red carpet experience meet and greet and the Backlot Express. It wasn't terribly crowded or anything that i can remember but we were also there on a lower crowd week so.
My wife def used the bathroom a few times and my 6 year old would usually go with her when she had to go while I stayed with the baby, I'm usually able to hold it haha. Luckily none of us had to shit any of the three days while at the parks.

That is usually my go-to, but last time I went it was packed. It's like in that little secret passage between Fantasy and Frontier.

I've been going my whole life and didn't find it until a couple years ago. Galaxy's Edge one by the water fill-up station is usually pretty good too. The one to avoid at all costs in at the entrance of Adventureland.
