I've been racking my brain. I can't decide if it's a patty melt with swiss, dijon, caramelized onions, and mushrooms... or a pub style burger on brioche with blue cheese, bacon, spinach, etc... or just a good old classic smashed patty on a potato roll with dijonaise or thousand island, LTOP. I think my ideal burger is gonna be dependent upon what mood I'm in and what type of burger I've had last.

Fresh, high-quality (85-93% lean) grass-fed beef patty, just slightly smaller in diameter than the bun, about 3/4-inch thick. Lightly seasoned with salt and freshly-ground black pepper, and well-rested prior to grilling over an open flame to medium. On a neutral but not bland bun, like a brioche or potato bun, that is substantial enough to support the burger to the end without falling apart.

Funny you should mention this. I've been reading up on different peppercorns the past few days and what I'm consistently seeing is that Tellicherry peppercorns are the shit. The price is reasonable.
