I've started making my own hot sauces recently and I doubt I'm gonna be going back to buying the stuff unless it's a damn fine sauce. It's so much fun! Made a Mango Scotch Bonnet sauce recently - after straining it through to get it smoother, I was left with a bunch of dry mash, effectively. Put that in a dehydrator, straight into a coffee grinder to turn it into powder, and now I have hot sauce seasoning and it's way too good. Getting a Christmassy cranberry ginger and habanero ferment going later which should be ready in a few weeks, really keen for that

I’m fermenting my first hot sauce rn!!! Market had Fresno peppers so I’m doing mostly those with a couple habaneros and serranos.
It's so good. The hot thai green is also delicious. I'm iffy on the truffle trend happening currently but want to try their take on it.
moderatly rich and earthy, but not overbearing. The chocolate is there and more dark and bitter which I appreciated. Would be great mixed into a burger. Healthy amount of heat but not a day ruiner.
One thing I'm working on for Packing Heat is sitting down with folks who have had sauces on Hot Ones and to hear about the before and after (I've got Bravado, Dingo, and Blair's so far on my list so far), alongside interviewing more people that work in Hot Sauce in general. If anyone's got some weird rabbit holes I should dig into, I'll happily take suggestions.
