If you are super particular about the texture of your hummus removing the skin of the chickpea makes it creamier. I don't think it's worth the effort. Like I said, few and far betweeen haha.

I think that texture can be achieved by cooking the chickpeas longer/running the food process longer/forcing them through a sieve/strainer/ricer. I've never, ever heard of anyone peeling chickpeas. You're puréeing them anyway... why bother.

 

I hate to break it to you guys, but fresh chickpeas come in a pod
