I have one episode left and this is my favorite show in a while. Severance is so great but I just relate to way too much in this show.

The cake makes sense because doesn't Portillos have a famous cake? That's a similar style sandwich, right? I was super confused when all of a sudden they had table service. My guess with the menu is they had sandwiches+rotating daily specials that were the full regular meals, I used to live near a place like that
Carmy and Mikey (and then Sydney) never really wanted to serve the Italian beef sandwiches and hot dogs. They wanted a different style restaurant with high end food. Their menu just seemed all over the place, kind of like the restaurant as a whole. The spaghetti didn't really have a place either but it was something they sold as a weekly special before Carmy took over. The chicken piccata was their mom's recipe and Sugar was cooking it in one of the early scenes.
Carm saying it didn't fit on the menu i didn't really get. Pretty normal for neighborhood mom and pop spots that specialize in sandwiches to also have a pasta section on their menu. Especially if your specially is Italian style sandwiches. I know plenty of small local places where you can get pizza, subs, wings, burgers, and spaghetti/ziti/parm
Not too unusual either. my local Mexican spot has plain old chocolate cake and cheesecake on their menu. Easy dessert options. What's unusual on the show isn't that cake is on their menu it's that it's from scratch and not frozen packaged Sysco cake like a restaurant like that almost certainly would serve.
