I might be alone in this, but I've yet to have any BBQ that's made me go "Wow, that's the best" - It's all fairly good, but nothing has made me want to wait in line for hours. I say this, because I live in Dallas and there are lots of people that swear by certain places and will get in line before the sun comes up to get their food. Most BBQ is pretty similar to me, I guess.
@ChaseTx Salt Lick is VERY good, but I don't know if I'd go out of my way for it. Seems like it's maybe 20% better than everything else, not worlds apart to me, but it's been years since I've had it. Carolina BBQ is a joke. Haven't found a single joint here in two years with good stuff. Miss TX/MO BBQ.
barbecue can definitely go wrong. very wrong. it's not the easiest thing to smoke meat for hours. if it cooks too fast it comes out tough or the fat never melts into the meat the Carolina mustard sauce is good
Oh man, that was such a letdown. Love me some Cookout fries, shakes, and of course burgers, but that BBQ was a no go.
Digital Internal thermometer is the best way to help avoid over/under cooking the meat. Nothing worse then over cooked meat you spent hours on.
I'm trying to convince my wife to do a kind of BBQ tour where we would go to different regions and try the best places in those states.
It's as great as everyone says LA Barbecue in Austin and Opies Barbecue in hill country are also about as fine a barbecue joints out there a beef rib from a great Texas barbecue place trounces everything else you can really get
