My girlfriend and I made this for dinner Wednesday night after I saw the recipe here. I then ate it again for lunch yesterday, and we both ate it again for dinner last night. That stuff is amazing. The only changes we made were that we doubled the corn and black beans, then juiced 2 limes instead of 1. No truer words have ever been spoken.
Made this tonight and it was really good! I don't think I'd add the Italian dressing next time. I used Sweet Baby Ray's new Hawaiian sauce and that with the brown sugar and dressing is super sweet. Which I don't mind, but I'd probably either ditch the dressing next time or try a different BBQ sauce
I liked it with the dressing. But I agree on it being a bit sweet. I might try it with a spicy BBQ sauce next time I make it.
My former roommate made these one time and I think I ate an entire half of the pan by myself. They're so good

It had been awhile since I made this recipe and I nearly forgot it, but we had some friends over this weekend and I made one of my dad's finger food/snack recipes for Sausage & Cheese WonTons and its super easy to make and delicious. You need: 1/2 lb of hot sausage 1/2 red pepper, diced 6 oz shredded sharp cheddar (a good handful works) 1 tbsp Ranch dressing Olive Oil A pack of wonton wraps A mini-muffin pan Brown the sausage, then drain and press the grease out. Throw it in a mixing box with the cheese, diced pepper, and ranch. Brush one side of the wonton wrap with olive oil and form it into one of the holes on the mini-muffin pan. Scoop the sausage mix into the wonton leaving enough room to pinch the wonton closed at the top. Fill each one up and then bake for 7mins at 400 degrees. A batch this size usually makes at least 30 wontons, and only takes about 15 minutes total to make. They reheat fairly well too, although they're definitely best within their first 15 minutes of being out of the oven. They also work really well as a side dish for a brunch, being sausage and all.

Awesome. Do you add anything, or what do you serve it with? I'm probably going to serve* it over rice and add bell pepper. *Is it still called "serving" when you're eating it alone?
