I would just sub in some mozz vegan cheese sticks cut into curd-sized bites made by Daiya. I have a pack in my fridge cause I’m going to make some mozz sticks eventually with wantons instead of a typical just breaded/fried mozz stick.

So vegan cheese in my experience so far has that creamy texture but not the stringy-pull-apart goodness of normal cheese. The good vegan cheese just replicates like craft singles.

i shredded half a block of smoked Gouda and half a block of Monterrey jack vegan cheeses on pizza and it was great. But not like real cheese for sure. But tasty.

Vegan cheese is so gross that I once hid a quesadilla made with it under the dining room table rug cause I didn't want my roommate who made it to be upset. I forgot about it for a week.
