Yeah the sweet apple. I guess we could also just catch apples and evolve them ourselves and then trade them unless you just want to item

Nope. You use the apple on it and it evolves regardless of the level.

I think that was more lore/backstory created by Game Freak for the reasoning behind the gym differences in each version than actual gameplay stuff.
