Can’t really go wrong with either. If you have nostalgia for the original games sun/moon is cool because there’s updated forms of a lot of the original 150.
I prefer X/Y, but I think I'm in the minority. You begin the game with two starters (a gen 6 starter and a gen 1 starter), so that part is fun. Some of my favorite Pokemon are in gen 6 (Hawlucha, Aegeslash, and Greninja). People's biggest complaint about X/Y is that it's too easy. You get the Experience Share super early so your team gets really overpowered. Gen 7 gets rid of HMs, so you get to full use all 4 slots on each Pokemon. It's also a different experience not having to battle gym leaders and battle Totem Pokemon instead. Ultra Sun/Moon has a much better post game than X/Y. I say check out each gen's unique Pokemon and go with the ones you think look coolest.
OR/AS has the best QoL stuff though. between the 2 options, definitely Su/Mo. X/Y is great though, but the latest released ones are what I prefer bec I pvp a lot

here for it. the first flick was thematically something very different than a lot of kids stuff was doing at the time and i think it honestly holds up pretty well
