for the gifts to have 7km eggs with regionals, the gifts themselves had to be picked up after the event started

It is based on when the gift is opened and the egg received, not when the gift was obtained. You can open old gifts and still get the regionals. I've been holding a few dozen gifts to open for this reason.

I didn't realize for last week I walked 24.9 km and I am upset because I could have literally made a excuse to walk to my car for something.

 

Just caught a 87% shiny Onix.

 

Unless something changed today, the egg is determined when you open the gift/spin the stop. As long as the egg is obtained after the event started, when the gift was obtained is irrelevant.

 

I've also seen a few Skarmory so that's nice for my Catch 50 Steel or Psychic Pokemon task.

Yep. Hatched 9 7k eggs; shiny Mime, 2 Kangas, a Tauros, and a few babies.
