I think any alfredo with cream in it is a cheat and not as good as it can/should be. The best alfredo I’ve ever had is also the one I’ve made, which is rare as I generally think my food misses the mark. Here’s two similar recipes:

Fettuccine Alfredo, Original Recipe

The idea is the same. Boil your pasta. Melt a lot of butter in a big pan or pot, add pasta, add lots of parmigiano, and add pasta water. Taste and adjust, repeat. Keep stirring until there’s no clumps and the sauce is smooth and thick.
