I’m agreeing with you that the events in the eternals didn’t influence Doctor Strange’s “one” chance of winning. I don’t think Strange would have continued looking into every possible future to see how else earth would end years after they’ve beaten Thanos.
The more I think about it, I don't think we really need to add more reasons to justify Dr. Strange's decision. It feels like the general idea was that if they fought Thanos directly, they'd lose, so letting Thanos "win" allowed them to take a different option that presumably wouldn't have been available otherwise.
Strange really wanted to meet Andrew Garfield so he had to make sure the snap happened, Tony did the third snap, Avengers RIP, Mysterio try to win, and for Peter’s life to get messed up. It was all a very simple formula that only someone with elegant taste could understand.

He also prevented any movies not starring white men because they "don't sell," and was a strict penny pincher to the degree of digging paper clips out of the trash (which reflected in comics and, when he still had influence, the movies); pretty sure the Inhumans push as replacement X-Men went back to him, too. Oh, and he's also a big Trump guy and was part of his "Mar-a-Lago Club" when he was president.
