Take a really pungent blue cheese like roquefort or stilton and add butter. About half and half. Maybe some salt and pepper. Combine it in a food processor. Put back in the fridge until you're ready to use it. It's a great topping for red meat. You might have had a burger with blue cheese? Or a steak with an herbed butter on top? That's the inspiration.
