It's a terrible anti-labor movie in retrospect, but the Hackman film I probably watched more times than any is The Replacements.
of the few Hackman movies i've seen, The Conversation is the best (French Connection and No Way Out were great too)
I think my favorite performances would all be obvious ones like The Conversation, Mississippi Burning, I Never Sang for My Father, Unforgiven, etc. But two very underrated ones are his (in every sense) straight man in The Birdcage and his performance in Under Fire.
