ah my favorite food. whenever i get a sub or something i usually get parm, but pasta dish is definitely the more full experience.

I went to an Italian place in Philly and got chicken parm. The guy asked what I wanted on the side and it confused THE FUCK out of me. Why would you get anything other than pasta?

I definitely prefer veal parm to chicken parm.

 

The type of pasta can make or break the dish too though, just like the bread on the sandwich

For example, I don't like bowtie or fettuccine pasta with my chicken parm but a good penne or spaghetti is great

I make it as a straight up meat entree and serve with sautéed garlic & lemon spinach or asparagus

The hand crushed tomato sauce stays on & flavors the chicken just fine if you melt some burrata mozzarella on top of it in the oven

I only make pasta afterwards to eat the leftover sauce the next day
