I don’t mind French Onion but my soup experience is severely limited.

Wild mushroom bisque sounds so good. Love french onion and clam chowder too of course.

She would usually just make a chicken stock and add orzo or ditalini pasta, carrots, chicken meat, etc. Grate parm on top, crack black pepper, so comforting.

I love any Asian noodle soup too.

 

Sweet potato is pretty festive and always good or butternut squash

I would brown most of the mushrooms in a large, heavy bottom pot with lots of butter. Add some shallot or onion, garlic, and thyme. Once everything is nicely browned, deglaze with white wine, sherry, or brandy (or water). Then add some water and gently simmer until everything is very tender. Pull out the thyme twigs. Then blend the soup until it's nicely pureed. Reduce until it's the right consistency and then add some heavy cream, salt, and pepper to taste. With your remaining mushrooms, sear them in another pan with some butter. To serve: pour bisque into bowls and top with freshly seared mushrooms, some sliced chives, perhaps a drizzle of olive oil, or whatever you fancy, really. Some croutons wouldn't be a bad idea.

At least this is how I am considering making it.
