I know for a fact that one of the options is right so I'd assume they were being truthful. However, Sophie has definitely stretched the truth in the past few years about some things so it's fair to question her sometimes haha.
Who is still left alive on Arya's list? Joffrey, Tywin, The Hound (presumably), Rorge (never officially on the list, but killed as soon as Arya learns his name), Polliver, Meryn Trant are all dead. Melisandre, Cersei, Walder Frey, The Mountain (eh, alive? undead? controllable zombie?), Thoros of Myr, Beric Dondarrion are all still alive, right? And then Ilyn Payne was on the list, but from what I've heard he's been written out of the show in respect to the actor who has cancer.
Arya is no one and doesn't have three people on her list that she could conceivably kill. But also, Lady Stoneheart can't return if she has yet to appear.
Arya checking 3 people off her list doesn't mean that she has to kill them herself. Several names have been taken off her list by the hands of others thus far. And I think the "Lady Stoneheart returns" thing is meant as 'Cat returns as Lady Stoneheart', not that 'Stoneheart makes a 2nd appearance in the show'.

Arya said her list the last episode, there were only 3 names on it at the time. Cersei, Gregor Clegane, and Walder Frey. It's possible she was lying, or also possible that she took a bunch of names off the list in some sort of forgiveness.
I also think as someone mentioned earlier that it was implied that that girl who is training her, the waif or whatever, is now on the list.
She could very well kill Walder Frey. He was the only one I remember in the trailer surrounded by unfamiliar faces. That'd be super satisfying.
From what I remember, he was there flanked by his two sons and a bunch of Frey and Lannister men. Arya disguised as a Lannister soldier? hmmmm
