But seriously, you can still get an incredible crust without smashing the burger onto the griddle/skillet until it is so thin that it falls apart. I form/smash my patties before they get in the pan so they can still have a flat surface on the outside and yet still retain thickness. It's the best of both worlds. Also, I salt my burgers a good hour before cooking to draw out that moisture and help the Maillard reaction along.

I'm probably conflating my enjoyment of Five Guys because now that I know how many calories are in a burger from there I can't eat it anymore. It's all nostalgia.

Haha uh I like tacos more than burritos? I'm not sure. You probably hate fish stew/chowder? I'm not sure haha.

I don't know why it took me so long but I've just now realized that I can replace poblano peppers in for bell peppers in all the shitty recipes that call for bell peppers.

I can't think of the last time I actually cooked with a green bell pepper. Roasted reds are different though.

 

I still think we should do that version of Chopped we came up with. Where the buttheads in this thread give us a list of ingredients and then you and I compete to make something out of it.

I fuck with roasted red peppers but something about bell peppers in any other form I find terribly unappetizing.

 

A version of chopped with members of this thread as judges and contestants seems like an amazing idea.

I've been wanting to make this cold pasta salad for a long time now. It has rigatoni, jumbo grilled shrimp, roasted red peppers, broccoli, olives, tarragon, and a red wine vinaigrette. So good.

 

We should organize it! Anybody who wants to participate could. And we would basically just make blogs about our recipes. It would be a fun way for us to all to come together as a thread!

I love cold pasta salad so much and that sounds amazing. I think I've mentioned that the lady is allergic to shellfish though so she'd ruin it for me, haha.

 

I agree. You could have a week or two to produce a dish once ingredients are settled. I wonder how much interest it would draw.
