I haven't had a pit beef sandwich I don't think. Will have to seek that out. This place Jimmy's Food Store- Dallas, Texas makes an Italian beef sandwich that I believe they dip (the entire sandwich) in au jus. I've heard GREAT things, but haven't had a chance yet.

I get mine rare with tiger sauce, horseradish, au jus. Perfection. I can't even begin to describe it. You don't need cheese. I make a trip down (about 2 hours) every year just to get one.
