    Yo, hear me out.

    Marinate the fish in mirin, soy sauce, ginger, cut up like 3 green onions, and some pepper for like 30 minutes.

    When it's done lightly dredge it in corn starch and then fry it. And like really lightly dredged. Fry the fish til it's crisp on the outside but still moist (I hate that word) on the inside. Pat off excess oil.

    When you are done get rid of all but little of oil, enough to cover the following: some ginger (slivered), onion, garlic (slivered), and chiles and let that shit fry and perfume. Maybe like 3 minutes.

    Separately combine about a tbsp of garlic chili sauce, 2 teaspoons rice vinegar, 1 tbsp soy sauce, 1.5 tsp of sugar, 3 tbsp of water, and 1 tsp of cornstarch. Mix that shit well. Add it to the oil mixture. Let it come together, maybe like another 2 minutes.

    Spoon that shit over crispy fish and white rice.

    Some of those measurements may be off. It's hard to think of when I'm sitting at my desk. But that's one of my favorite ways to prepare fish.

    That sounds really good. I'm only hesitant because I made a beef stir fry last night and served it with white rice... I don't know if I want to go that route two nights in a row. That was mostly lime, soy, ginger, garlic, touch of mustard, and chiles.

    why don't I stop over for dinner sometime soon once you get to a fish market?

    If not, I will make that the next time I cook fish. It really does sound excellent.

    Catfish is pretty much the default fish in the south. It was the only fish we really ate growing up

    haha, I figured.
    I got both recipes from a keto mailing list.
    Chicken Cordon Blue Casserole-
    layers of chicken, diced ham, and swiss cheese, topped with a heavy cream sauce and an almond meal/parmesan crust on top.

    Shepherd's Pie
    Beef browned w/ chopped leek & carrot, some rosemary and thyme thrown in, too. topped with chopped up cauliflower mixed with cream, butter, and parmesan. this one was cooked all in one cast iron pan. brown the beef and cook the veggies on the stovetop, add the topping and throw in the oven.

    I'm looking for something new to eat that's low carb, low cal (300 or lower), and smaller portioned for dinner. Something easy, if possible. I can eat 3-4oz of meat with some sauce, so it's always tough to make real food while living alone.

    Debating on something salmon, pork chop, chicken... I'm just bored with deli meat and eggs. :/

    I usually just saute with seasonings. I'm okay with that for sure, but it's nothing terribly new. I just don't do it super often. *shrug*
