    I can't wait for new years day. Pork, sauerkraut, hot dogs, apples, pancetta, and some hard cider all slow roasted together and served with mashed potatoes. Is there a better meal? I should make it twice a year instead of just once.

    It's pretty easy to be honest. I try to cook everything in one pan first. Crisp the pancetta and put it in a baking dish, sear the pork chops and add to baking dish, then the hot dogs, then the sauerkraut, then add some diced onions and get those brown, add some diced apple, add a small amount of dijon mustard or coarse ground, and then deglaze the pan with a hard cider... I usually go for the stella cidre. Let that cook down until it's thick and pour on top of all the food in the baking dish. Then bake it covered for a few hours at like 275 or 300 and then uncover and jack the heat up at the end.

    I want to try to cook Indian cuisine but every recipe i find i either cant find the ingredients or it seems way too daunting and i know I'll fuck it up.

    No, I thought about it, but everything I know is self taught from different cook books and watching some cooking shows... certain ones teach you so much more than others. Like Tyler's Ultimate, Iron Chef, Ramsay's Kitchen Nightmares (BBC version only), and a couple of bobby flay shows like Boy Meets Grill and Throw Down. Chopped is good too. I used to be depressed, struggled with anxiety, etc., so when I'd lock myself in my room and ball my eyes out, I'd watch cooking shows to ease the pain, haha. I worked locally at a bar and grill for over a year, but that's about it. My friend is the head chef at a local restaurant and he wants me to come work with him, but I'm not really sure how I feel about it. It is fun to write specials and get positive feedback in an environment like that though.

    It's like crack. So much porky goodness. Goes especially well with champagne.

    I taught myself to cook because the town i live in is small and all the restaurants are varying degrees of shitty. There's one cafe here that i love but they are only open at breakfast and lunch M-F so i don't get to eat there often.

    So it was either eat trash every night or learn to cook.
