The key is to brown your chuck roast or short ribs before slow cooking them. I use a dutch oven for most slow cooking I do and it is absolutely worth the price. In short, brown your meat, then brown your veggies in the leftover fat, then deglaze with wine or beef stock or both... transfer to your slow cooker and add some herbs and maybe vinegar (which you don't need if you have wine). Lots of salt and pepper too.

Do I need to add beef stock or anything?

I made a modified version of that recipe using short ribs on Saturday night. It's consistently one of the best things I make. I served it over some creamy polenta and topped it with the red wine gravy included in that recipe link.

Once you brown your meat and veggies, you'll want enough liquid in your slow cooker or dutch oven to cover the meat 1/2 to 2/3 of the way so that it doesn't dry out. I prefer wine over beef stock, but I get the best results when I use mostly wine and a little beef stock. Once your beef is cooked, you can pull it out and reduce that wine to use as a sauce to serve with the beef.

I highly suggest using this recipe too: Beef Bourguignon : Tyler Florence : Food Network

It's very simple and cheap to make. Just takes a little elbow grease.

I always thought elbow grease was some kind of grease.

I ran out of gross microwaveable pasta and made a PB&J for lunch today. Twas not filling.
