Threw together a quick salad with grilled zucchini/corn/shrimp, red onion, tomatoes, feta, cilantro, and lime juice. Really nice to not have to use the oven.

I made pork last night! Another round of DiNic’s copycats will be in my near future.

 

I ordered the fresh n lean meal delivery service which delivers prepared meals that are vegetarian and low cal low carb. It's pricey but I got a promo code so I thought I'd try it. I ate one today and it was like a cauliflower veggie bowl with a sauce. It was pretty good! My concern is that it was pretty low on both calories and carbs which I know is what I requested, but like not enough calories to really constitute a meal. But it's nice when I've worked all day and can just pop it in the microwave. I will just have to supplement them with snacks throughout the day if they're all that low cal. Like I want it to be low cal in a reasonable way!

 

Was all excited to make ramen when I realized I forgot to get miso. Fried rice was a solid backup.

 

My take on jerk chicken for the first time! I fucked up and didn’t defrost the chicken thighs last night so I made it kinda teriyaki style. Served with rice and beans with allspice (!!!!! I’m kind of shocked at myself for using that because I only use allspice in Christmas cookies) and an avocado salad with corn. Yum! Came out awesome. I used the marinade from the recipe above but omitted five spice because I didn’t have it.

 

I’ve been up since four, smoking a brisket. Today was suppose to be the only day not to rain and now I just checked the radar and there’s a big storm headed my way...

 

Okay biggest issue with my prepared ahead of time meal delivery service thingy is how little variation there is between meals. They all have the exact same ingredients that are made very similarly with only slight differences and it's only day three and I'm already kind of over it

 

That would get old to me super quickly. Hope you can find something that fits your needs for a more long term scenario!


My dad is bringing me eggs this week so I’m baking more bread to give him a loaf. Happy I can do something for him directly since we can’t spend time together.

Also I’ll be doing my roast pork sandwiches in a day or two and I’m super excited. I’ll try that oven fry recipe again with a few tweaks.

 

Making pizza dough for pizza tomorrow and shrimp po’boys on Friday. I might try making my own bread for the po’boys.

I bought cheetos popcorn. It tastes like regular cheddar popcorn with the added bonus of cheeto dust fingers

 

Everything should come with that bonus.

Which reminds me, I have an unfinished review of that KFC Cheeto fried chicken sandwich.
