    Nothing like a classic mashed potato/pork tenderloin/tomato cuke and radish salad. My belly is happy.

    Tonight I went on the spicer side of things. This smoked chicken had a hot rub on it. The pickles were hot as hell and it was topped off with a super spicy finishing sauce. Needless to say my bald head was sweating. upload_2020-6-14_19-35-30.jpeg

    Used a 13% stout that’s one of my favorites and mmmmmm it was perfect. One of my favorite batches of it ever.

    not sure what type of ribs you're going for but that temperature seems a little high. Usually for BBQ ribs you want the temp around 225-250 and cook for a few hours. The glaze on those sounds really good though

    I finally started watching Salt, Fat, Acid, Heat on Netflix and it’s delightful and all I want now is some really good olive oil and prosciutto.

    Hey All,

    I need your best comfort food recipes (preferably ones that aren't too labor intensive or rely on hard-to-find ingredients).

    My wife had a seizure on Wednesday, found out she had a brain tumor, had brain surgery on Thursday, and we have a long road to recovery ahead of us.

    Love you guys.

    I'm so sorry to hear this. I'm wishing her a very speedy recovery and both of you the best. :heart:

    My favorite thing to cook that's easy is steak frites au poivre. Frozen Fries + pepper-crust some steaks, then deglaze the pan with brandy/cognac, add a little beef stock and heavy cream, maybe a touch of dijon. and done.

    Here's one of my favorite chicken recipes:
    Tarbell's Pan Roasted Chicken with Broccolini and Buttermilk Whipped Potatoes

    so sorry to hear this, sending you and your family best wishes.

    I always fall back on simple pasta dishes. My favorite one is essentially this as a guideline:

    Penne With Hot-as-You-Dare Arrabbiata Sauce Recipe

    and then adjust based on what I have in the house. I usually add a knob of butter at the end to make it a little creamier.

    Cacio e pepe or carbonara are other good options that are pretty simple.

    One of my favorite comfort food meals is one of my moms chicken casserole dishes that we just always called "favorite chicken." It is not healthy at all and doesn't look super appetizing on a plate but it's very good.
    • Melt a stick of butter and pour half into the bottom of a glass casserole dish
    • place chicken breast strips down in the butter
    • cover the chicken with slices of swiss cheese
    • pour and spread a can of cream of chicken soup over the cheese
    • cover it all with pepperidge farm herb seasoned stuffing mix
    • drizzle rest of melted butter over top
    • cover with foil and cook at 375 for an hour. remove foil for last 15 mins
    • let rest for ~10 mins

    jambalaya is my personal go to. i don't have a recipe really bc it's muscle memory at this point (sorry!) but there are plenty out there
