    I want some fries so bad. Found a recipe for baked ones that says it’s the closest to deep frying so I’m going to give that a shot soon. Down the road I want to make some real fish and chips too.

    Guess I should mention it isn’t about a lack of equipment, I’m just trying to be very careful about making my ingredients last as long as possible right now. Don’t really want to use cups and cups of oil for one recipe, so if I can find a baked version that’s anywhere near the taste I’ll be stoked.

    that's understandable. although, you an reuse the oil for the most part. Unless you use for fish then I only would use it for fish again as the smell is quite lingering

    Yeah, I’ve always found reusing it to be more hassle than it’s worth, but if I do any during this I will try to save what I can. I am planning on making some fried chicken tacos next week since I can make a much smaller batch of those.

    Yum! What method do you use to make the fries? And if you do the double fry how long do you fry both times? They look crunchy and delish!

    I followed Ludo Lefebvre’s recipe that I posted earlier. It’s a single deep fry at 350 for about 15 minutes. They were rustic but fantastic.

    Making burgers tonight. Midwest speciality, the Goober Burger: bacon, mayo, slice white onion, pickles, cheddar, and peanut butter.

    Fuck me sideways. Put my lasagna in the oven and noticed a bowl of egg yolks. Which means there's no binders in my meat sauce. May be eating lasagna soup.
