    Rick Bayless | Black Bean-Sauced Enchiladas

    That's the inspiration, but I'm not really sticking to it. My plan is to saute some onions, garlic, and 1 or 2 chipotle peppers in adobo, deglaze with wine or tequila, then add black beans (canned is what I have on hand). I'm going to add either chicken stock or water to the beans, let them cook until they start to burst, and then puree that mixture and reduce it. I have some cumin, Mexican oregano, ancho chile powder, and coriander that I might add if the flavor needs a boost.

    Thanks! I've never made anything like it before. I winged a Mexican black bean braised lamb recipe that I saw on No Reservations that came out amazingly well, so I am optimistic.

    If I could suggest anything, maybe add some lime juice if you have it? A bit of acid in a sauce like that is always great

    Good idea! I was thinking about slicing some white onion for on top of the enchiladas, but now I'm thinking about pickling some red onion for even more acid.

    LOVE pickled red onion. When I make steak tacos my first step is always doing a quick pickle of red onions in lime juice.

    Do you prefer your pickled red onions to be pickled with lime juice or something like red wine vinegar? I've almost always used red wine vinegar or a combination of lime & red wine vinegar.

    Seriously haha the biggest issue I run into is not having the appropriate spices/herbs for a recipe and then just winging it if I have something remotely close

    I always try to have stock, onions, garlic, rice, dried pasta, canned tomatoes, lemon, lime, and some fresh herbs on hand. Then I have a bunch of vinegar, staples like flour & cornstarch, and a plethora of dried herbs and spices. That gets me pretty far. I also thoroughly plan out most of my meals before I go grocery shopping and that helps me out week-to-week.

    I’m not sure! Like 3 years ago I got a Home Chef box that told me to make them with just lime and salt and I’ve never gone back. I guess it’s more of a mild pickle, the flavor isn’t as offensive.

    yeah, I need to do a much better job of keeping staples like that in stock. I also need to just go and buy ALL of the spices. been thinking of throwing a couple fresh herb plants out on the fire escape during the lock-up haha

    Usually I only use about half the juice of a lime per half sliced onion (full lime if you want more ZING) because the salt brings out extra water from the onions

    No, haha it wasn't you. I wanted to share, but I'm too self-conscious! I also realized there was a bong sitting on the counter so that pushed me over the edge and I deleted the photos.

    I can go through my spices & dry herbs if you like. I have a good rotation of them, with which I am very comfortable using, and replace as they become empty.

    I've grown fresh herbs off & on, but my current living situation makes it difficult to do so, so I've been buying them a lot lately. There's also these which are awesome, last for a while, and are so much better than dried herbs:

    Respect for having a bong in the kitchen, Ken! My girlfriend and I have just moved all that from our bedroom to our coffee table during this pandemic lol

    lmao amazing. I've bought these things a couple times and they're great, just not in the store in my new neighborhood here. if you don't mind sharing what you're always using that will help the next time I go. I usually just get what I need and then it's in the collection and never really gave it more thought than that.

    also usually smoking and cooking at the same time too. it signals the true end of the day for me.

    fyi you can extend the life of some of your fresh herbs by cutting the stems off the bottoms and putting them in a jar with some water. Works well with like parsley and the like.

    I tempted to get an Aerogarden type thing or similar to try and always have a few in the house all year long. In the summer I have a garden bed outside and usually plant a few herbs but that only lasts a couple months
