    @bigmike i would just say that you want to sear the mushrooms before the onions. You want the mushrooms brown, so adding in onions at the same time will stop that from happening. Add the tomato paste before you add the wine and let it cook for a minute or two. And add the flour when you add the tomato paste. Skip the slurry the recipe suggests. Be sure to stir in the flour an tomato paste thoroughly before adding your wine & stock. Lastly, i think you only need the pearl onions. If you bought them frozen, I would add them when you add the wine.

    Mushroom Bourguignon Recipe

    Here’s another recipe you can use as reference! They cook the mushrooms and onions at the same time, but i think that’s a big mistake and would rather cook them in separate steps as both have a lot of water content and you’ll end up with steamed mushrooms instead of browned.

    My brother lets me use his YouTube tv account and I’ve stumbled back across Jamie Oliver’s stuff and it’s the first cooking show I’ve started watching since going vegan where I actually draw inspiration from it instead of “yeah no idea how to make that meatless/dairy-less.” I know people like to hate on him but I think he’s delightful.

    I’ve usually liked most of his videos I’ve watched. I remember really liking this short series he had where he taught a group of high school kids some basics of cooking and learned a fair amount from it. There was also a short series where he made a bunch of things to bring to an outdoor festival/party thing and I really liked the recipes he had for that too
