    100%. De Cecco is definitely the best dried pasta you can find in your average grocery store. The difference in price couldn't be more worth it.

    It's funny cause that's what BA recommended for the recipe and I blatantly ignored it to save a few bucks, learned my lesson haha.

    It was pretty inedible lol. I chucked it because I was pretty mad about it but now I feel kinda bad and felt like I coulda done SOMETHING with it.

    My girlfriend and I make vegan ricotta out of tofu all the time. Simple af since it’s not as labor intensive as real ricotta.

    Another (very similar) recipe that I followed:



    I think it took me 6 hours total the first time because my timing was off making fresh pasta and the béchamel, but it came out so damn good. It was very helpful to watch him actually make the stuff. The fresh pasta is worth it if you can do it, but I've used the dried sheets to good results.

    we were rollin' out again on Saturday and had some killer nachos and beer... that were simply out-of-bounds!

    We got there for happy hour and spent three hours at the bar lol. I split all of the food with my fiance. Started off with a dozen oysters (beausoleil, kumamoto, chef creek, and eel lake... the beausoleil were my favorites), clams casino, steamed shrimp, and the king crab dinner (which was 2-2.5lbs of king crab lebs... the two biggest crab legs i've ever seen). We each had a couple martinis, some beers, and a few glasses of wine. Like I said. I can't rave about this place enough. Happy hour was packed... the bar area is a decent size but everyone wants to come for the happy hour. Luckily we got two seats at the bar after camping out for 45 minutes.

    Would love to make some fresh pasta one day but it'd have to be a weekend project! The taste difference is always worth it.

    Thanks for the tips and the video. I ended up going out last night and buying some ricotta, fresh mozzarella and better noodles and using the sauce I already made. The only problem was it was a little dry - I'm thinking cause the sauce was made to be paired with a bechamel (and was quite thick and meaty, less saucy) it didn't work as well with the ricotta and mozz. Either way I'm glad I ended up finishing lasagna after all haha.

    Made our mozz slices a little too thick and couldn't evenly distribute them across the top but the taste was there!! Pretty pleased with my first lasagna attempt.

    Sounds amazing! The way you describe it reminds me alot of Dock's Oyster House. Im definitely convinced Ive gotta go...now just to find the time!

    Honestly, I can't decide if I like Dock's or Henlopen City better.

    I'm convinced that a good oyster house is my favorite type of restaurant. If I could launch my own oyster house, I probably would. French bistro inspired food w/ a massive raw bar haha.

    Yeah. My family used to go to Maine every summer for vacation. I went back a couple of years ago and can't wait to go back soon. Where have you been up there?

    Thats awesome. Ive only ever been to Portland. Kept reading how great of a food/beer scene they had and I wasn't disappointed!

    I'm dying to go to Portland. I've always just driven past it. The episode of the Zimmern List where he goes to Portland is a great episode.
