    Carolina pulled pork on the smoker for 11 hours. Also made some homemade coleslaw that paired perfectly on a sandwich.

    I bought my gf an air fryer for Valentine's (because she had one at home and hasn't stopped talking about them since we moved in together) and I have to say I am a convert. Made mac n cheese bites from Trader Joe's in it last night and they came out so crispy and delicious. The fries didn't come out so well but that's because we were already high and didn't cook them long enough haha.

    Also made the bolognese from the BA lasagna recipe last night, it took 5 hours between prep and cook time (4 hours in the oven!!) and I didn't have panchetta and FORGOT the onion :verysad:. Maybe I should prep before I eat an edible. I did not anticipate such a long cooking time so didn't get to finish last night. Gonna make the bechamel and finish it off tonight.

    I bought a vortex(heat shield) for my charcoal grill. Since its gonna be another warm weekend,I think I'll have to smoke some wings.

    So I tried last night to finish that BA lasagna and it was a disaster lol.

    Besides my mishaps with the bolognese it came out fine. However, the bechamel was a mess. I'm not sure what I did wrong, they said to bring the heat to medium-high to get it to simmer after adding the milk but my burners (despite being gas) for some reason have a lot of trouble getting things to temp, and after almost 10 minutes (it called for 4) it still wasn't simmering...so I upped the heat a bit but ended up just burning the bottom (which got these ugly brown bits in my sauce after I stupidly scraped the bottom), the sauce never simmered and instead ended up frothing and boiling up, and it was grainy and tasteless at the end. So tragic.

    And the lasagna noodles...man could I not cook these right to save my life. They said 3 minutes in the water to make them foldable but still willing to snap, however mine just wanted to snap in half even after 5 minutes...I also think buying cheap stop n shop noodles might have been part of the problem.

    So the sauce I'll use for pasta or something but what a failed experiment. :verysad:

    i used a combo of the BA and Babish lasagna recipes a few months ago and it came out kinda nice. except with store ricotta. no one has time to make ricotta.

    I considered getting some fresh ricotta too from one of the Italian markets around here and doing that instead. Is that all you changed?

    I definitely recommend De Cecco like in the BA recipe for dried pasta. They're a little more expensive than other brands but they are very good
