    Food be good lately. Made carnitas tacos for dinner the other night. And today I made mini cheesecake bite type things using a variation of this recipe - I made them in individual little cupcake cups though.

    Chocolate Peanut Butter Cheesecake Bites

    I forgot to put vanilla paste this time. Next time I’m sure it’ll come out even better!

    edit: if anyone is gonna use this recipe I think the way it’s written makes it too easy to over beat it. Mix the peanut butter w the cream cheese instead! Then follow the rest of the directions. And for the yogurt I subbed sour cream and added more peanut butter yummmmm

    I have really good results even with just an hour or two worth of exposure to air. If I want to make a steak, i'll typically pull it out of the fridge, salt it heavily, then prep the rest of the ingredients for my meal. Just that little bit of time makes a big difference. I'll salt and expose my steaks to air for up to a day before I make them though.

    I have some Le Creuset that I use all the time and some cast iron and some random ones that I’m not happy with and need to splurge to replace. Recently I’ve also started using some super old pans from my grandmother that are kind of weirdly shaped but work pretty well.

    A lot of the pots I use are these big ass heavy pots made for restaurants that were used in my family’s businesses over the last 4 decades lol Now I can’t boil pasta in a regular sized pot anymore

    the chicken was relatively basic/pan fryed and seasoned with S&P and paprika. the "cajun" came more from the sauce, which was alfredo mixed with hot sauce and a cajun spice packet we had lying around

    I have a cuisinart stainless set that I got for our wedding that's not bad. I've been slowly building/rebuilding my cookware with all individual pieces. A Le Crueset dutch oven, Lodge 10" cast iron, and Misen 12" nonstick and a saucier. Tempted to get a carbon steel pan next

    we got some nice pots & pans but they were all stuff my wife picked for our wedding registry, so it was free. have a big wedding, folks.

    We got the cookware set, our toaster oven, a kitchenaid mixer, a knife set and some other smaller things. It was pretty awesome

    Made that Cajun chicken breast salad and it was gooood. I used @phaynes12 ’s hot sauce in the vinaigrette and it came out great!!
