My grandma used to make us mac n cheese with velveeta and elbow macaroni and truthfully I loved it so much. Crack some black pepper over it and it's mint

You should all try some real Swiss cheese, if you can get them.

If people want I can someday translate a recipe for a Swiss specialty that you could somewhat describe as Swiss mac and cheese. It’s amazing. No fake Swiss cheese allowed though.

I like "American" Swiss, but I love buying emmentaler, gruyere, and raclette when I can.

Don’t get me wrong, I’m not dissing your cheese. I’ve always been curious about American cheese. It’s just that the name is funny to me, haha.

It doesn't make sense. Nor do the varieties of baby, lacy, etc.

Plus the fact that cheese shouldn't be yellow...

Most of the American Swiss I've ever seen has been off-white. At least Boar's Head is.

Just a little education on how food is processed, how accustomed we are to certain things like yellow cheese...all it takes to eat better and shop for the right things. Even on a budget it doesnt have to cost much different. My kids ask why i shred cheese myself when i can just by it pre shredded, so i showed em the little white specs on preshredded cheese, the anti clumping stuff, seemed like a 'light bulb moment' and now they get it. Wish i would have grown up knowing a lot of this stuff...

You just blew my mind with the shredded cheese thing haha, I had no idea about that

I'm back for recs, my dad said he'd get me a knife set from amazon for my new apartment but I don't know how to tell the difference in quality at lower price points. I don't want him to spend more than $50 so I know it won't be amazing but if anybody has a simple knife set in that price point on amazon they can recommend I would appreciate it!

@K0ta I would focus on three knives (chef's, serrated, paring) to start, unless you need a set of steak knives or something. Wusthof, Shun, Victorinox, and Global are my favorite brands.

The Victorinox chef knife is incredible for the money. I've gifted it to multiple people and they all love it.

Btw your American Swiss cheese/American Emmentaler is probably a product of the many Swiss immigrants that once went to America so it’s only half fake

When he made Loco Moco, the hawaiian rice/hamburger thing... he did it off of my suggestion ;). One of my crowning achievements...also this is me eating at Not Not Tacos in Little Italy.

You gotta go way back, even years before they started this format...he has a lot of basic stuff that is great. I'm a much better cook because of him and all of his food tastes great.
