Slow roast a leg of lamb
or ribs. lol. might be messy but you can cook the ribs in the oven and then get some char in the grill. or prime rib roast and then grill your sides.
i also saw a recipe on serious eats for al pastor kebabs. maybe a taco bar? you can prep your sides in advance and just grill your tortillas and protein
Leg of lamb and gyro bar. Grill the pita and slow roast the lamb over some charcoal. Make a grilled Greek potato salad to go with it.
Not sure if this group would do lamb or not haha. Also, pork is way cheaper
I thought about doing al pastor tacos, serious eats has a cool make-ahead recipe for it. it's still on the table
Tacos are always a solid option when hosting.
