Chickpea Caesar Salad | Minimalist Baker Recipes

I made this vegan salad on Sunday and it was DELICIOUS. I doubled the tandoori spice blend recipe and used it to coat chicken breasts which I cooked up and have enough dressing leftover to put that in salads with the chicken for the rest of the week. Throw in a bunch of other veggies and it's a delicious meal. I'm not technically vegan obviously but I do like to work in as many vegan meals as I can.

 

minimalist baker is my favorite vegan blog. her alfredo is really great too

 

I love her recipes! Apparently she's started incorporating animal products back into some of her recipes, doesn't bother me but just thought I'd throw that out there.

 

I bought seitan chorizo for taco salads for lunch this week and I really like it. I actually prefer it to regular chorizo which is sometimes too smoky and fatty for my taste.

 

I love that stuff! I used it in a chili instead of meat and it was delicious.

Yeah it's the original one in AC. Honestly the last time I was there it was a bit disappointing but the one in Hoboken is always on point.

 

I've never been there, def trying it. Ill be in A.C. again in late June - that sandwich looks like an amazing hangover cure lol

 

Their whole menu is insane. Make sure you try one of their french fry sides and also the Olè cheesesteak is incredible.

 

I was looking online and definitely wanna try the Ole cheesesteak or pizza.

 

Store here got beyond patties and I got all excited, not realizing there's only two in a pack. So now I gotta use all these hamburger buns I also bought.
