Yes it did lol. The nutmeg sounded good but I couldn't tell if it had cooled too much? Or something else, but it looked lumpy. I wouldn't know if adding hot or cold milk would make the difference - what would you say?

I was watching the video and thinking, "his bechamel looks great so far!" and then he topped the sandwich with it haha. My guess is he was in a rush to make the sandwich for the camera and didn't fully incorporate the roux into the milk in the first place.

I've always added milk or cream at room temperature or slightly cold. I've never heated the milk or cream before, so I think the real key is whisking a lot. I might over-mix if that's possible? But I never have any lumps.

I forgot it was Friday and Catholics can’t eat meat on Friday so that made the menu even smaller for me lol.

I ended up getting a salad as a side with a shrimp pasta. It was actually pretty good.

I usually tend to ignore it but since this year we are doing my sister’s quincenera and they don’t want any bad luck, I decided to join in.

It’s weird but I don’t really mind it.

we finally made sourdough from our starter that we've been tending for a week and a half

    my gf's beautiful scoring design

it looked so good!!!! but it tasted okay lol. it smelled like sourdough when baking and the starter was super active but the taste was so bland. it didn't taste tangy or sour at all. the crumb was also a lil dense.

so we're starting over this week lol. our previous starter was all all purpose flour so we're starting with whole wheat flour instead (we don't have rye to start with). and then i'm going to do a cold ferment overnight in the fridge to develop the taste a little bit more. bread science is nuts

thank you! it was such a shame that it tasted so bland. we're gonna try different techniques this time. i also went against all your suggestions and made cuban pork sandwiches which was super delicious but my mouth is hurting because i guess i'm sensitive to acidic/citrusy foods

thanks dude! yeah, fingers crossed. there's no 'right' recipe online. we've been using king arthur's recipe and a few tips from my gf's bread book but so far it all experimental. just super labor intensive and takes a long time. i have new found respect for bread bakers lol

I tried to make some sourdough bread a few months ago and it did not go very well at all. It felt like I went through a whole bag of flour trying to get my starter going. It's incredibly difficult and it reminds me of this video, and at the end he just goes "how the hell is bread not like $40?"

hahaha we've watched that video so many times. i wanted to try their technique with the slapping/folds with king arthur's recipe but my gf said that they use different flours so the technique might not apply. i just love claire + brad so much. we almost named our starter baby brad
