    I tried elk meat over the weekend. Wasn’t bad. Had I not known beforehand, I would have guessed it was some uncommon cut of steak.

    I've heard elk is great. Really wanna try it. My friend just got a bunch of deer on his trip to Illinois. Can't wait to eat some bacon wrapped backstrap.

    There was this restaurant nearby that served all game food. They had pulled elk nachos and they were the shit.

    ..but the restaurant closed. booooooo

    I've only ever had an elk burger. It was pretty good, like a more intensely/gamey flavored beef burger.

    I have eaten an elk burger and a bison burger. both were amazing. I liked the bison burger way more tho.

    Bison, for me, tasted so close to beef that I might not be able to tell the difference in a blind test unless I was literally just given plain patties. Really enjoyed it, though.

    Had it from here, for anyone that's never been and is near one.

    I have woken up in the middle of the night craving nachos but I'm not gonna get them cause I'm in PJs and I work in the morning and nowhere here has good nachos at this hour anyway. So. I'm just laying here craving nachos. I didn't eat dinner cause I wasn't hungry. But now I am. So this sucks.

    I'm working on a 3 or 4 course dinner for New Year's Eve. New Year's Day is the traditional pork + sauerkraut + mashed potatoes + hot dogs. My favorite meal of the year, but I'm gonna try to make New Year's Eve better than New Year's Day. It will be tough.

    The dinner itself isn't that much work, just searing some hot dogs, pork chops, pancetta, onions, apple, and sauerkraut and then reducing a bottle of stella cidre and then baking them low and slow together in the oven for a few hours. I guess that is a decent amount of work haha. The mashed potatoes will be a pain though. There's a chance for eggs benedict in the morning and that's definitely just a chance haha.

    It is. I love the pork & sauerkraut tradition with all my heart. I'm still trying to figure out what to make for dinner the night before. I have too many ideas.

    I'm down to these ideas:
    -Seared halibut with clams, roasted potatoes, corn, cream, tarragon, white wine, bacon
    -Lobster gnocchi with parmesan cream sauce, seared mushrooms, wilted spinach, roasted cherry tomatoes
    -Coq au Vin

    I cooked some sliced flank steak in the crock pot with this sauce last night and was in fajita heaven. HIGHLY recommend trying this sauce.

    Well it’s just a combination of a bunch of individual preparations. Roast the cherry tomatoes with salt and pepper in the oven until they start to burst. Make the gnocchi in two steps, boil them and then sear them in a little brown butter. Steam the lobster. Sear the mushrooms separately. Then add the mushrooms and lobster to your cream sauce, which I imagine would have brandy, white wine, or both. Garnish with baby spinach. Something like that. I hope that helps, I don’t have a recipe so much as just an idea in my head.

    The sauce is probably just a blonde roux with a bit of shallot and garlic, the alcohols I mentioned above then reduced, then add some heavy cream and fresh parm and let it thicken up. Herbs too. Probably tarragon since I love it with fish.

    Edit: Champagne in the cream sauce would also be really great instead of plain white wine.

    I told him no and he started laughing and just walked away.

    A co-worker said I got trolled and I'm still so confused.
