I like adding peanut butter. We're doing a chili cookoff at work today and I tried a new recipe, but I'm not sure how it's going to go. By a new recipe I mean I mashed like 4 recipes together. Added some miso paste and soy sauce for a little umami kick and a little cinnamon from Guy Fieri's recipe. Also did the thing where you reconstitute dried chilis in boiling water then blend it, I used the immersion blender and basically made pepper spray and burned my eyes and throat with the steam.
Y'all aren't putting actual chilis in there? I always do like pasilla and a hotter pepper and saute it with the onion and garlic.
It’s eaten with white rice, yeah. But from my understanding, it’s typically on the sweeter side (some recipes I’ve seen add sugar, or as my wife does, ketchup)
gotta toss a couple canned or dried chipotles in there for the spice/smoke. I also keep a variety of dried peppers in the freezer. Usually pasillas, arbols, guajillos, chipotles for a bunch of different spice levels. The arbols really kick things up a notch if you're brave. Also a fan of a liiiiittle bit of dark chocolate and cinnamon in there on occasion.
It makes a big difference imo. I usually use some kind of märzen/festbier but anything that’s not crazy hoppy (or a barrel aged stout/sour) would be pretty good!
I am a sucker for Wendy's chili. I made smashed potatoes like potato skins last night and they were really good. I par-boiled the potatoes, smashed them on a sheet tray, and then roasted them in bacon fat. Then I topped 'em with melted colby jack, bacon, horseradish sour cream, and a ****-ton of chives.
Got this from a BBQ truck about an hour from where I live. It's hard to find good BBQ up here ha, so I'm glad I found this place. Should be going there again on Sat for a special cajun menu they're serving. Cheesesteak w/ smoked tri-tip, peppers & onions, and hatch chile queso. BBQ plate: •pork belly burnt ends w/ ginger-soy glaze •sausage w/ smoked chicken and pork, crispy bacon, dill, scallions, and ranch powder •mac n cheese w/ roasted green chiles & garlic bread crumbs
Speaking of chili, I found a really good meatless chili recipe. Made with black beans and split red lentils.
Went back to the BBQ spot this past weekend. Order came with rolls, pickled okra, jalapeños, and pickles. • Pork Spareribs w/ sweet tea glaze • Brisket Boudin sausage • Stuffed Quail w/ Cajun dirty rice filling • Chicken & Andouille Gumbo • Soft Shell Crab and Fried Green Tomatoes, both cornmeal fried so they look the same in the pic haha
The breakfast food at most fast food places is typically disappointing, especially at Dunkin & Starbucks, but I do have a soft spot for that bacon, egg, and gouda sandwich at Starbucks. It's too expensive, but it always hits, even when it's bad.
I just ate one and I could easily eat two more. But alas, the decades menu is here, and I have plans for an early dinner.
