Seems to be something that some people just dont like, same as mushrooms. I think cod / salmon, while both different are good entry points to see if its something you'll ever come around on. My wife wasnt into seafood or mushrooms till lately and we're still hit or miss, but trying to get more of both into our diets.

Had some good food on my trip to Denver. Chickpea croquettes, sliced fried sweet plantains, hickory smoked picanha, biscuits, coriander roasted Colorado lamb. This was described as an oxtail lasagna, and it’s quite possibly one of the best things I’ve ever eaten. What would we do without pizza.
I'm making "souvlaki" "tacos" tonight in a completely inauthentic, hybrid version of the two dishes, but I am excited for them. They've become almost a weekly staple for us. Chicken marinated in olive oil, lemon juice & zest, garlic powder, and dried oregano and then grilled. Then I make a salsa/relish of chopped kalamata olives, cucumber, tomato, red onion, calabrian chili, olive oil, and red wine vinegar. I use greek yogurt, feta, garlic, olive oil, lemon, and some of the leftover cucumber to make a rough tzatziki. Finally, I'll rough chop the chicken after grilling and put it on grilled street-sized flour tortillas, then top it with the relish, tzatziki, some lettuce, and more feta. We typically make some sweet potato fries in the air fryer with the tacos. Couscous would be a great side too, especially if combined with some of the relish. I highly recommend trying something like this if you haven't. ediit: tzatziki goes on the bottom of the tacos, beneath the chicken.
Now that I think about it, I'd like to try switching the lettuce for shredded nappa cabbage that gets added to the relish mixture.
They look great! Nice job on the folds and keeping em closed. My biggest weakness in the kitchen is always the finesse stuff like that.
peach and tomato salad with burrata and a hot honey peach vinaigrette! Going to a cookout and wanted something easy and fresh. The peaches weren’t super ripe so I macerated them then used the juice for a simple dressing. I think once I can get some good local produce later this summer, it’ll be even better.
first time for posting in here. my partner and i generally try to do homemade pizza every weekend when able, and this weekend we decided to do our most ambitious one yet. we used a spicy vodka sauce base, topped with fresh mozzarella and black pepper toscano cheese, pickled red peppers, soppressata, arugula, a pan fried chicken cutlet, and a drizzle of hot honey. it was about $50+ in ingredients, but it's easily the best pizza/thing we've ever made.
I made Eggs Royale (eggs benny but with smoked salmon) this weekend. I was very pleased with how it turned out.
I'm basically staying at an airbnb/vrbo equivalent for the next 10 days. What are some of your favorite things to cook when on vacation? I'm not sure if I'm able to grill or not, but I'll take any ideas or suggestions. Nothing too elaborate, as it is vacation.
