You ever learn something like super basic about cooking and it changes your life forever? I recently learned to sear meat/fish in the pan for a little bit before putting it in the oven. Holy shit lol. I was previously doing pan only (often burnt) or oven only (often dry). The searing is so easy and comes out so much better every time lmao. Anyway here’s some blackened halibut I made tonight using my revolutionary new skills.
I recently went to a smaller food show for work and tried a blood orange flavored olive oil with chocolate espresso flavored balsamic vinegar and it weirdly paired so well together.
This is everything I tried today at Disney’s Food & Wine Fest at California Adventure: 1. Spam Musubi Fried Rice: Excellent. Perfect balance of flavors. Spicy of the umami mayo, sweet from the grilled spam, and the savory of the rice and egg 2. Cafe De Olla Tres Leches Cake: Fantastic. Only gripe was that they were pretty heavy on the leches so it was a little too soggy. But god damn it tasted so good and was so refreshing on a hot day 3. LA Mini Street Dog: Loved this one. Tasted like Costco made one of those hot dogs you get after a concert in SoCal. Every ingredient complemented each other excellently. Also loved that they used legit, thick-cut bacon. I’d love a full-size version of this 4. BBQ Bacon Cheeseburger Bao: This is a revised version of the cheeseburger bao they had last year. Last’s year’s was fantastic. But this one was only okay. The burger filling was good, but the sauce they had with the meat didn’t mesh with the sweet bbq sauce. Drizzling the bbq sauce on the outside made a poor, messy eating experience too. The fried onions were also just like, French’s fried onions 5. Impossible Sloppy Joe Slider: Way better than I expected. You could not tell it wasn’t real meat. Seasonings and spices were great. Loved the toasted, buttery bun. Could’ve done without the American cheese though. But otherwise, wonderful
My wife is Lebanese and we spent the weekend with her family. Long story short, we’re heading home with loads of Lebanese leftovers so I’ll be eating good the next few days.
Prepped some braciole for my first Sunday sauce I’m making tomorrow, did a breading filling with pecorino romano, currants, basil, parsley, finely grated garlic and toasted pine nuts:
Made a curry for the first time. First diced onion and fresh garlic and fresh ginger. A bunch of other spices. Tomato and coconut milk. Sweet potato, chick pea, and spinach. Was a vegan recipe actually. Came out really good!
I made BBQ tofu with some root veggies and it smelled so good but is actually so mid. My bf asked if I wanted fast food on his way home and I decided to be a grown up and say no and eat my food and I legit think I deserve a medal and all the praise for this willpower. Only cause I'm rewarding myself with a chocolate fudge pop after I also made my trusty kale salad which thankfully saved the day. Just kale and a few strawberries and pepitas and feta and craisins with light poppyseed dressing cause sweet > savory
Some pastas we shared. Bolognese, Pappardelle al Cinghiale (braised wild boar), and Pasta all’Alpina. Brisket chili smash burger and a pastrami sandwich. Couple tacos and pupusas. Forgot to throw on the pickled cabbage before taking the pic. So good.
Made some banana bread cinnamon rolls with brown butter cream cheese icing. I wish they had more banana flavor but the texture was great and the icing made up for it.
Smoked a pork belly and made tacos with pickled red onions and cojita cheese. I was very pleased with the results.
This is right after taking it out of the oven after a 6ish hr cook so doesn’t look as good as it did once I had all the meat out and skimmed the fat off. Finished it off with a small sprinkle of sugar and red wine vinegar. Soooo damn good. Ended up tossing in a chuck roast, Braciole, short ribs, and sweet Italian sausages. All the meat was falling apart by the time I took it out. Maybe the best sauce of any kind I have made at home. I wanna do this every week now.
Damn about 15 years late to the party lol they used to be a go-to for me late in high school and thru college but fell off haaaaard for me since they cheaped out on a ton of their ingredients and constantly change the menu. Still love that chipotle chicken avocado melt if panera is my only option though.
Yea, I can't think of a place I used to like that fell off more. The individual components are good, but it's just slopped together in such a haphazard way and so expensive and skimpy that I haven't been in forever.
