My problem with Thai food is that all of it that I've tried is delicious but I need to try more except pineapple fried rice has me in an absolute chokehold so if it's on the menu then chances are I will not branch out because it's just so good and it never misses.

Looking for some meal suggestions for a picky eater if anyone has any! Just got blood labs back and I'm prediabetic now so I gotta really avoid carbs and sugar. I got stuff like low carb white wraps that only have 5 grams of carbs for lunch, chicken breast, pork chops, ground turkey for tacos, chickpea Banza pasta, sweet potatoes instead of potatoes. Also figure I can just make lettuce wrapped burgers instead of buns. And instead of cereal and junk food, I bought eggs, apples, bananas, cheese sticks, baby carrots... But otherwise that's all I can think of. And it's pretty damn pricey and not even enough meals to cover a week. I hate cooking so usually 2-3 nights I make frozen breaded chicken breast, frozen breaded chicken strips, fries, pizza ... But I can't really do that anymore. So. Yeah. Just hoping for some easy ideas for a picky eater that also doesn't break the bank

Not a huge success lol. It tasted great but had no structure and kind of just turned to mush. I think I needed to let the crust cool completely before adding the creme fraiche, it just melted and the Gruyere sunk in and mixed together.
Unfortunately not My sister gave me some good ideas though.. making some chili and soup in the crockpot, stir fry, roasted chicken sausage & veggies. Also gave me a good Crock-Pot recipe for chicken & salsa tacos
Bowls are always a good option. We do a Mediterranean bowl with some grilled chicken, cabbage or greens, roasted Chickpeas, Feta, Cucumber, tomatoes, Hummus and garlic sauce. Or a burrito bowl with ground turkey and everything but the tortilla. Big salads are always a good option, would probably be a good idea to learn how to make a quick dressing to avoid added sugars in store bought. Usually any combo of Olive oil, red wine vinegar, lemon juice, garlic, shallots, mustard, and salt and pepper you can't go wrong with as long as you have a fat and an acid.
Nice! Got myself a salad spinner and a bag romaine. Will probably just prep a bunch of big leaves and put them in plastic bags with a paper towel so I can use them for burger wraps or chop them up later for salads
Honestly the easiest way for me to eat healthy each week is meal prep. If I have the healthy option on hand, I’m more likely to eat it. Mission tortilla has the best low carb wrap/tortilla and are actually 0 net carbs. There’s a line of breads/English muffins called 647 that’s lower carb higher fiber that I really enjoy too for breakfast options. I always have 2 easy dinner options on hand when I get lazy, frozen grilled chicken strips and cooked shrimp are my current go to. It’s helpful to have something you can just microwave when you’re feeling lazy and throw on a bagged salad or eat as a wrap. Don’t try to drastically change your whole diet at once, just try to find realistic swaps and things that make it easy for you to choose the healthier options. @RyanPm40 I don't know how I missed your post. I was diagnosed as pre-diabetic in 2016. My doctor basically advised a Mediterranean style diet. There was a lot of grilled chicken and veggies and even some fish (which like you, I wasn't the biggest fan of). I kept snacks basically limited to carb free stuff like cheese strings, pickles, beef jerky, pork rinds, basically stuff with a lot of sodium lol. Eggs are your friend. Pasta/pizza/rice are not, unfortunately. I'd second the low-carb wraps. They've been a mainstay for me for years. And don't try any low carb ice cream or cereal (especially Magic Spoon) - they're pricy and poor imitations. Have they taught you to carb count/read labels?
Oof yeah I tried a Mediterranean diet when I had gastritis and it was way too strict for me to follow unfortunately. No, didn't teach me anything really or tell me how low my intake should be. Just to keep it minimal. My fiance explained to me how you basically subtract fiber from carbs to get your net carbs you're taking in. Pickle spears is a good idea for a snack, actually! I also have pretty high sodium too which is a concern, but maybe cutting out the junk food will make up for that. I ate a lott of chips. I've been really just snacking on cheese sticks, apples and carrots
So, I have some Kens Creamy Caesar dressing I bought and opened months ago. Best buy date is the end of this month.. am I safe to eat it if it's been opened?
If it's been in the fridge I'm sure it's fine as long it doesn't smell or look weird. But don't sue me if you die.
