The type of shit I’ve been on, braised short ribs w/ a red wine sauce. Got myself my first Dutch oven and don’t think I’ve had short ribs so felt like I had to make them. This is after like 3 hrs in the oven. About a 3 day process but so worth it. The smell taking over my apartment is killing me. Finally get to eat them tonight.
Not the prettiest but final results from dinner tn. I made a roasted cauliflower/broccoli purée in place of a starch and blended in the fat that separated from the braising liquid when it cooled overnight. Those came out pretty dang good but holy crap the beef was perfection. Like butter honestly. Very happy with these so I’m definitely gonna keep up with braising.
I really just took some basic recipes I found online for the time, temp, main ingredients and just edited them to my liking tbh! Nothing major but some things I added were jalapenos and garlic when cooking down my mirepoix, a bundle of thyme, parsley, and bay leaves for the braising liquid, as well as coriander seeds (which I wouldn't recommend if you actually wanna use the mirepoix veggies in your dish after straining them)
Made knock off crunch wraps the other day and they were dope. - Hot mexican chorizo - Nacho cheese (just frito lays, nothing fancy) - Tostados - Made a sour cream blend with cilantro / lime / garlic as the chorizo was a little spicy. Also made some mac and cheese (not perfect, but pretty good) that I ate like a child with some hot honey buffalo tenders.
Made some chicken cutlet sandwiches with caramelized onions, bacon, pickle, and spicy mayo and some cheese balls. Burned one of the cutlets. Onions were great takes forever tho
Looks good. And yea, caramelized onions take forever to get them really rich and deep. I make french onion soup a good bit in the winter and it's definitely a patience game.
Why does every bagel place refuse to give you not an absurd amount of cream cheese. I legit told them to go very easy on it lol I can't imagine what this one would have been otherwise. Hardly can see the bacon haha
