Went to a vegan fest yesterday and picked up some chicken of the woods. Excited to finally try it, did not disappoint.
So I was selected as a semi-finalist for Sutter Home's yearly burger creation contest... 1 of 20 to win 25K. They're flying me out to Houston in a couple days to go up against three other people and make my burger there at an Astros game. Tested it out with some family friends tonight and they all loved it, so now I get to refine it over the next 10 days. Basically, avacado bacon burger with custom sauce, aurgala, and red onion on a brioch bun. But, crazy that I was selected.
I mean, after taxes it'd be like 18K, tops... probably splurge on a Behind the Seeds tour at EPCOT. And the biggest bowl of choup they offer.
RIGHT! I've never been there before, so at least I'll knock off another stadium off the list to have visited. Hoping they put me in the hotel across the street with the Texas shaped lazy river.
Robert Irvine was on base today so I showed him my recipe for Monday and IMMEDIATELY told me how choosing 80/20 beef was a bad idea Gave some good tips for it though.
Anything between like 85/15 and 80/20 beef should work just fine for most burgers, just up to personal preference imo and can depend on what you're putting on it I guess. Even something like 75/25 can work but shrinkage can be a problem with more fat.
I'd love to hear his advice. Somewhere at or between 70/30 and 80/20 is what I use. 80-20 is pretty much standard everywhere you go and for good reason.
I went to get dinner at this chicken place near my apt I’ve been wanting to try, that seemed similar to another one a bit down the road but cheaper….$14 for basically a kids meal! The quality was that of McDonald’s. The chicken sandwich came with fries, but I was hardly given any (took it to go). I thought it seemed odd how the box was small but thought maybe that’s just how it looks. Nope. Hardly any food. I will be giving a negative Yelp review.

Been obsessed with garlic confit lately. I recently made a caramelized onion and garlic dip with like 5 heads of garlic for my last D&D session and it was incredible. Also used it with some bruschetta/burrata cheese as a spread on some nicely toasted fresh bread. *Jeff's Kiss*
