Mexican Ground Beef Skillet (+More Ground Beef Recipes) - Fit Foodie Finds Some changes I made from the recipe since I just used what I had at home. I didn't have black beans so I used pinto. I just used mccormick taco seasoning instead of homemade like it says. I also added more since it felt like it needed more flavor. Lastly I didn't have quick cook rice so I just used regular rice but cooked it first with less water and then added tomato paste and less beef broth to the recipe instead of the sauce and the full amount of broth. Turned out pretty good, I think I'd make it spicier next time. I've been throwing some mule hot sauce on it.
Here's a lasagna I made this weekend that I'm super excited to dig into at lunch. Made with homemade sauces. I added pecorino romana, parmesan, grated nutmeg, garlic and basil into the white sauce. and the red sauce was just a standard bolognese with sausage and beef and veggies and tomatoes. I didn't use ricotta as I like it with the white and red sauce only, then I topped it with sliced mozzarella and parmesan, The layers kind of bled together which I'm bummed about, but even though it was meant exclusively for lunches as a meal prep Sunday, I couldn't help but eat a small 'taster' slice for dinner and I'm very happy with it taste wise.

My grandma will only make lefse with lutefisk when family from Norway visits. The smell is so bad, It makes me wanna puke.
My grandma once told me I had to try lutefisk because of my Norwegian ancestry but I lied and said I was a vegetarian. Years later, I became one and then confessed to her. She of course knew I was lying the whole time lmao.
I was always told how disgusting lutefisk was by my grandma but lately I've been weirdly interested in trying it. Not with lefse though

First try at Ratatouille! I’m a person who isn’t the biggest fan of squash and I need a lot of salt and flavor so I tried to roast everything I could in the tomato sauce like the peppers and onion, added the tomato and salt drippings from when I was getting the moisture out of the cut tomatoes (tomato water - incredible). I did do the salt method with the squash and eggplant because I hate a runny sauce. But it made the assembly so difficult because the cut rounds were no longer rigid and imo it hurt my presentation. Oh and also made basically an herb pesto with an absurd amount of black pepper and garlic on top. Hopefully it comes out well!
Unfortunately no lol did read like 10 recipes and combine them all in my head to make it. fin! (It’s pretty spicy because I added half a seeded jalapeño and 1-2 tsp red pepper flakes in the sauce)
I didn’t add this in the description but along with the herb pesto (basil, rosemary, parsley, oregano) I was bored while it was cooking so I made just a basil garlic Parmesan pesto which I finished on top. I have an absurd amount of herbs in my fridge because my friends’ gardens are over growing with stuff. I’m just so happy to have a reason to use them before they go rotten
