That pumpkin pie sounds fantastic, I need to bust out her book again and try some new things. Girlfriend and I decided to just stay home this year and cook for ourselves. We're keeping it pretty basic but got a nice Mary's turkey and are going to try a mushroom stuffing with whatever cool wild mushrooms we can find at the fancy store and good bread from a local bakery. Other than that just mashed potatoes and green bean casserole. We usually try way too many crazy things and just end up stressing ourselves out and being exhausted halfway through the day.

spatchcocking is by far the best. it's a fair amount of work up front the day or 2 before but then you get the backbone to use for gravy and the day of it's so easy to just toss in the oven and you're done in like 1.5 hours. might try Kenji's mayo smothered turkey this year. usually i do herb butter smothered all over and under the skin but i'm interested in this method
Ive never gotten to be head chef at thanksgiving but that's what happens when you live in an apartment and never get to host. Those that are making a full spread, share your work! +1 for spatchcocking the bird being a great way to go. I did make stuffing/dressing (is that just regional or is there a difference?) for friendsgiving that came out well, but I've had to freeze it so I hope it reheats fine. I'm out of town and getting back just in time for that, so it had to be made early or not at all. Also made a vegan chili that was I was pretty happy with. No special ingredients, extremely mild (it wasn't just for me), but a good consistency and taste. I am going to make a beef chili later, and for that I will go crazy (grind some short ribs, use dried chilis etc). This was just basic comfort food.
If you can get some hen of the woods mushrooms, they add a wonderful flavor. We’ve used them in shepherds pie before and they added so much to it.
You can express thaw it in cold water. I did mine in a cooler, changing the water every 30 minutes and rotating it. 30 minutes per pound. Cover it all the way.
